Grain-free Pigs in a Blanket (gluten-free)

Ingredients

  • 1 box Chebe all-purpose bread mix
  • 2 T. organic, grass-fed butter, melted or coconut oil
  • 2 large organic, pasture-raised eggs
  • 1/3 cup warm water
  • 6 organic, non-GMO hot dogs
  • 6 slices of raw cheese or dairy-free cheese
  • garlic salt to taste
  • butter for brushing

Instructions

  • Preheat the oven to 375°F. Line a 9x13" glass baking dish with parchment paper.
  • In a large mixing bowl, combine the melted butter, the Chebe mix, and the eggs. Add 1/4 cup of the warm water. Partially stir the dough and continue to add the warm water until the dough can be formed into a ball and handled without it being too sticky.
  • Gently knead the dough until it smooth. Divide the dough into 6 equal portions.
  • Sprinkle some tapioca flour on a cutting board and place one of the dough pieces on the cutting board. Press the dough into a triangle shape.
  • Place a hot dog and a slice of cheese on the widest end of the triangle and roll the hot dog up in the dough. Place the pig in a blanket on the baking sheet.
  • Repeat steps 4 & 5 until all the hot dogs have been rolled up in the dough pieces.
  • Bake for 20-25 minutes. The bottoms of the blankets should be a golden brown. Brush the tops of the blankets with olive oil or butter and sprinkle on some garlic salt. Serve warm and enjoy!

Notes

For Dairy-free: use coconut oil or avocado oil instead of butter
For Egg Free: leave out the eggs and use an egg substitute and/or increase the warm water until a workable dough forms
