In a large saucepan, combine all of the sauce ingredients. Heat the ingredients over medium heat and whisk constantly. Continue to whisk the mixture until it starts to boil and thickens. This takes about 10 minutes.
Once the mixture has thickened, pour it into a glass canning jar and let it cool for 30 minutes. Cover the jar and place it in the fridge to let the sauce finish cooling.
Once the sauce has cooled, start making the mac'n'cheese. In a large saucepan, bring enough water to a boil to cover the pasta.
Once the water is boiling, add the Banza pasta and stir it gently. Leave the pasta un-covered and turn the heat down to low. Cook the pasta for 8-9 minutes.
Strain the pasta from the liquid. Add the cheese sauce and stir until everything is mixed together. Enjoy or save for later! Store leftover mac'n'cheese in the fridge.
