This dairy-free vanilla pie has a delicious, smooth texture similar to pudding and a flavorful vanilla taste! I love that this pie is grain-free, gluten free, dairy free, and nut free! It is super easy to make and has simple ingredients. The coconut sugar in the pie filling makes it look more like a chocolate pie, but the taste is purely vanilla! I love this pie’s smooth texture paired with the delicious crumb topping. This dairy-free vanilla pie will not disappoint!
Before we get to the delicious vanilla pie recipe, I want to share with you three dates that you can put on next year’s calendar! National pie day is on January 23. National pie month is February and national pi day is March 14. Celebrating these dates should be simple and fun! Here are some ideas to help you celebrate:

- Gift a pie to someone special.
- Throw a pie party (you can translate that however you want)!
Pi Day
National Pi Day is celebrated on March 14 in honor of the first 3 digits of a mathematical constant called pi. The first three digits, 3.14, are the beginning of the never ending number that represents the ratio of a circle’s circumference to it’s diameter. The first Pi Day celebration was held in 1988, but was not officially recognized until 2009. The Greek symbol for pi is:
Pie Day
National Pie Day is celebrated on January 23 as well as on December 1. The American Pie Council has promoted pie day since 1986. Not only is January 23 national pie day, but it is also rhubarb pie day! As a matter of fact, many different pies get their own day dedicated to them! Cherry pie day is February 20. March 2 is banana cream pie day. April 28 is blueberry pie day. Coconut cream pie day is May 8. Apple pie day is May 13. There are many more pies who get a day in honor of them, but that may be for a different post. 🙂
With that many pie days to celebrate, I better get you some more pie recipes! This creamy, sweet vanilla pie is definitely one option! It may not make it to your Thanksgiving gathering, but it might be perfect for a different pie day!
Dairy-free Vanilla Pie (low sugar)
Ingredients
Pie Filling
- 1/2 cup coconut sugar
- 2 tblsp. Bob's Red Mill tapioca flour
- 1/4 cup pure maple syrup
- 1 cup water
- 1 free-range organic egg
- 2 tsp. vanilla extract
- 1 vanilla bean pod optional
- 1 unbaked pastry crust
Crumble Topping
- 1/3 cup cassava flour
- 1/3 cup Bob's Red Mill tapioca flour
- 1/4 cup coconut sugar
- 1/2 tsp. baking soda
- 1/4 cup cold coconut oil or cold organic butter if not dairy free
Instructions
- Preheat the oven to 350 degrees F.
- In a large sauce pan, whisk together the coconut sugar, maple syrup, and water. Add the egg and whisk thoroughly.
- Bring the mixture to a boil and add the tapioca flour, vanilla extract, and vanilla seeds from the vanilla bean pod. To remove the seeds, split the bean pod open lengthwise and scrap out the seeds.
- Whisk everything together. Continue whisking until the mixture becomes thick. Remove from the heat and pour the mixture into the pie crust.
- In a food processor, gently pulse together the cassava flour, tapioca flour, coconut sugar, and baking soda.
- Cut the coconut oil up into tablespoon size pieces. Add the coconut oil pieces to the food processor and pulse until crumbs form.
- Evenly sprinkle the crumble mixture over the vanilla pie filling. Bake for 30-35 minutes. The crumble mixture should be lightly browned.
- Cool before serving!
