Bursting with peanut butter flavor, check. Sweet, check. Hint of chocolate and graham, check. Not only is the flavor and texture going to amaze you, but the simplicity and ease of making this pie is fantastic! I love making this pie becuase it’s simple, can be stored in the freezer, and it’s a pie that my whole family loves!

A Modern Pioneer Twist

Soooo….. the early pioneers probably weren’t able to indulge with a creamy, frozen peanut butter pie. However, this peanut butter pie is a benefit of being a modern pioneer. The grocery stores carry all the ingredients you would need and your handy-dandy freezer keeps this special dessert frozen until you’re ready to consume it.

You don’t have to harvest your own peanuts or coconut to make the peanut butter, coconut cream and coconut sugar, although that would be kind of cool! There are some things you can make though to put a modern pioneer twist on this pie.

A graham cracker crust is pretty easy to make. If you’re feeling real ambitious, you could even make your own graham crackers. Hint: that’s on my recipe bucketlist! You could even make your own peanut butter (grind peanuts in a high power blender) and dairy-free milk (grind coconut shreds and water together in a high power blender). While I did neither of those things (slacker!) I did make my own peanut butter cups to put on the top! More on that later though.

21 Days of Pie

So here’s a little back story behind this recipe. This no-bake dairy-free peanut butter pie was originally part of my 21 Days of Pie recipe series I did a few years ago. When I was going back through my recipes, I noticed that this pie recipe needed a desparate update. Despite the revisions, I would still like to give you a brief idea on what the 21 Days of Pie were all about.

If you type ‘pie’ into our search bar on the blog, you will more than likely be presented with many, many pie recipes. That would be thanks to the 21 Days of Pie series. Now for a brief disclaimer, if some of those recipes look a little shabby, it’s becuase I wasn’t into full blogging mode back then and didn’t know how to put together a decent blog post! The recipes are still good though, and I am slowly working on redoing all the images and content.

Anyways, a personal goal of mine was, and still is, to try making every single kind of pie I can think of (with a little help from Pinterest). I am well over 50 different pies now and still have a quit a list to make! The 21 Days of Pie series was a way for me to share just a few of the pie recipes I created.

Can it get any easier!?

I started off the 21 Days of Pie series with this peanut butter pie becuase it was so simple and easy to make! I still enjoy the simple process of throwing one of these pies together for special occassions, or just for fun! It only requires 5 ingredients, 1 bowl, and about 15 minutes of your time.

Not only that, but it is also ‘healthy’ for you. Or maybe I should say ‘healthier’ for you. Here’s why I think this peanut butter pie is healthy, it’s…

  • dairy-free
  • gluten-free
  • tree nut free
  • corn free
  • grain-free filling
  • no-bake
  • contains a slow metabolizing sugar

If that’s not enough to make you want to make this pie immedietly then I feel like I have embarked on a lost cause! Who needs any more than ‘this is healthy’ to have a slice of pie!?

Homemade Peanut Butter Cups

Now, for the part I promised would come, making your own homemade peanut butter cups! It’s really quit simple.

All I had to do was make my own peanut butter mixture, melt some chocolate chips and then put the two together! Here’s the simple recipe that I created.

Homemade Peanut Butter Cups

Ingredients

  • 1/4 cup powdered coconut sugar
  • 1 T. organic butter softened
  • 1/2 cup organic peanut butter
  • 1 cup Enjoy Life mini chocolate chips

Instructions

  • Place 18 mini muffin liners on a cookie sheet. In a small mixing bowl, beat the peanut butter, coconut sugar, and softened butter together until it is creamy. Place in the freezer.
  • In a small saucepan, melt 1/2 cup of chocolate chips over low heat. Spread some of the chocolate into the bottoms of the muffin liners. Place in the freezer and freeze until they are solid.
  • Melt the remaining chocolate chips. Remove the muffin liners and the peanut butter mixture from the freezer. Place dollops of the peanut butter mixture into the muffin and liners and cover with chocolate.
  • Place in the freezer and freeze until solid.

However, if you are in a time crunch, or this just seems like too much work for such a simple pie, I do have some peanut butter cup alternatives that always work great as a back-up plan. My favorites include the sugar free Lily’s dark chocolate peanut butter cups or the UnReal dark chocolate peanut butter cups.

Recipe Tips

Last but not least, there’s the traditional ‘Recipe Tips’ section. This pie was so easy to make I considered not including this section. But then I thought of a few helpful tips that might make this easy pie even easier to make!

  • To powder the coconut sugar, I used a small seed grinder and powdered a 1/4 cup of sugar at a time.
  • If you made the homemade peanut butter cups, you will find that you have leftover peanut butter mixture. Use that in your pie!
  • I used hand held beaters to cream together the coconut milk, coconut sugar, and peanut butter, but any kind of mixer would work, even a food processor.
  • Scoop out all the coconut cream from the coconut milk can to use in the pie first. Then use the leftover coconut milk for the remainder of the coconut milk that the pie calls for.
  • I found that freezing the pie for 30 minutes prior to sprinkling on the peanut butter cups helped keep the peanut butter cups from sinking into the pie.
  • Let the pie set out for 10-15 minutes before cutting it! Trust me, it will save you some blisters!

No-bake dairy-free peanut butter pie is the perfect pie to whip together for any celebration! I love making this pie for family gatherings or parties because everyone likes it and it is a dessert that even the dairy-intolerant family members can enjoy! It’s also nice that I can make this pie up to a month ahead of time and just store it in the freezer until I need it.

Ingredients

  • 1 1/2 cups canned coconut milk
  • 1/2 cup powdered coconut sugar
  • 3/4 cup organic peanut butter
  • 18 homemade peanut butter cups
  • 1 graham cracker or cookie crust prebaked

Instructions

  • In a large mixing bowl, beat together the peanut butter, coconut milk, and coconut sugar. Pour the mixture into the pie crust and smooth out the top. Place in the freezer.
  • Cut the peanut butter cups into quarters. Remove the pie from the freezer and sprinkle on the peanut butter cup pieces.
  • Freeze for the pie for 4 hours. Allow the pie to soften for a few minutes before serving. Store the leftovers in the freezer.
