Grain-free Triple Berry Pie (nut free)

Grain-free triple berry pie is a delicious combination of three nutritious berries: blueberries, raspberries, and strawberries! These three berries provide a flavorful and sweet filling that give this pie an amazing taste and texture. I love that this triple berry pie not only contains beneficial berries, but it is also grain-free, gluten free, nut free, and dairy free! This grain-free triple berry pie would make a great festive dessert. You can make this pie as fancy or as simple as you want!

I make my triple berry pie with blueberries, raspberries, and strawberries, but you can feel free to substitute other berries in instead of those three. Blackberries are another common berry that would taste great in a triple berry pie! Berries are very high in nutrition and are considered a nutrient-dense food. Each berry has it’s strong point and can be beneficial for your overall health!

Benefits of Berries

Raspberries- Raspberries are a good source of Vitamin A and, like most berries, they contain beneficial anti-oxidants. They are also an anti-inflammatory food and help boost your immune system. The property called rheosmin in raspberries can also help increase your metabolism.

Blueberries- Of all the berries, blueberries contain the most beneficial anti-oxidants! They are also anti-inflammatory, help improve brain health, promote a healthy immune system, and are high in fiber which aids with digestion.

Strawberries- Strawberries are another anti-oxidant rich berry that also contain a good amount of Vitamin C. They are an anti-inflammatory food that can help ward off inflammation-triggered ailments. The salicylic acid found in strawberries promotes healthy digestion while folate that strawberries contain help keep your blood healthy.

Blackberries- Blackberries also contain anti-oxidants and are anti-inflammatory. They help the body produce collagen which aids with healthy bone growth and maintenance.  Blackberries are also high in fiber which is beneficial for maintaining a healthy digestive system and they boost the immune system.

Fancy Pie Crusts

You may have also noticed that not only does this pie contain beneficial berries, but I also topped this pie with a fancier pie crust! There are so many fun and creative ways to make your holiday pie pretty and decorative. Many of these ideas are very unique and I would love to try them myself! Here are a few fun ideas to get you started:

  • Polka-dot crust- I tried a polka-dot crust for this triple berry pie. It was easy to do and turned out pretty neat. I used a small circular cap to punch holes out of my top pie crust. Then I laid the pie crust over the filling and pressed the edges together to seal the bottom and top crusts together.
  • Crimped edges- I do crimped edges for a lot of my pies since it is very simple and doesn’t require a second pie crust for the top. To create crimped edges I use my fingers and press waves into the edge of the pie crust.
  • Star Spangled Pie– For my strawberry rhubarb pie I used a star cookie cutter and placed pie crust stars over the top of the pie. You could really use any shape you wanted, it doesn’t have to be stars! I have seen leaves, turkeys, Christmas trees, words, and flowers made out of a pie crust and placed on top of the pie!*
  • Lattice- Lattice is a pretty common fancy pie crust. To make a lattice you basically cut strips of pie crust and weave them together over your pie.

*Note: When placing cut out shapes on top of your pie you will want to be aware of the density of the pie and the cook time. If your pie is not firm the shapes will sink and if the pie bakes for too long the shapes will burn. You may consider baking your pie for a little while, then removing it from the oven, placing the shapes on top, then finish baking the pie.

Proper Pie Crust

Making fancy pie crusts may sound fun and all, but they can get frustrating if you don’t use the proper materials. Ask me how I know! Fancy pie crusts may seem even more daunting when you are faced with using gluten-free, grain-free, nut free, and dairy free materials! One pie crust that I have found is really easy to make into a fancy crust is the Chebe pie crust.

Chebe Pie Crust- Chebe all-purpose bread mix can easily be made into a grain-free and even dairy-free pie crust. Follow the instructions on the box and if you want you can add 2-3 tablespoons of coconut sugar. The nice thing about a Chebe pie crust is that one box of all-purpose mix provides you with two pie crusts, one for the bottom and one for the fancy top crust. Chebe pie crust is very easy to work with, soft, holds together, and can be cut into many shapes. I used a Chebe crust for my triple berry pie.

You can try and use other pie crust recipes to make into fancy crusts, however, you may need to make a double batch to have enough dough to work with. Also, some grain-free pie crust  recipes may not hold together the best to be made into a fancy crust.

Grain-free triple berry pie is still a fantastic pie whether it is made into a fancy pie or not! The berries contained in this pie offer some nutritional value and the wholesome ingredients are healthier for your body. I love how easy this pie is to make and how delicious the end results are!

Grain-free Triple Berry Pie (nut free)

Ingredients

  • 2 cups organic strawberries fresh or frozen
  • 2 cups organic blueberries fresh or frozen
  • 2 cups organic raspberries fresh or frozen
  • 1/4 cup coconut sugar
  • 1 tblsp. lemon juice
  • 1/3 cup Bob's Red Mill tapioca flour
  • 1 Chebe pie crust see Grain-free Blueberry Pie recipe

Instructions

  • Preheat the oven to 395 degrees F. Prepare the Chebe pie crust by pressing half into a 9" glass pie plate and pressing out half for the top pie crust.
  • In a large saucepan, combine all of the berries over medium heat. Stir in the coconut sugar, tapioca flour, and lemon juice.
  • Bring the mixture to a simmer and allow it to simmer for 5-8 minutes. The berry mixture should begin to thicken. Stir constantly.
  • Once the mixture has thickened, pour it into the pie crust. Place the top crust over the filling (make sure you have holes to allow steam to escape) and press the bottom and top pie crusts together.
  • Bake for 40-45 minutes. The mixture should be bubbly. Remove the pie from the oven and allow it to cool completely before cutting and serving!
  • Store leftover in the fridge. If you really want the slices to hold together, you may consider refrigerating the pie before you cut and serve it.
