This gluten-free strawberry rhubarb pie is the perfect combination of sweet berries and tart rhubarb. It is a simple, summer pie to create and can be whipped up quickly in the homestead kitchen! The main ingredients can even be sourced right from the homestead garden if you grow strawberries and rhubarb. Making a grain-free pie crust and a gluten-free or grain-free topping for this pie is super easy, so don’t be intimidated by making an allergy-friendly pie crust and topping. Each slice of this pie is perfectly sweet and bursting with summer flavors… the perfect summer dessert or snack to enjoy on the homestead!

Modern Pioneer Recipe

While pies certainly have a pioneer heritage, I would consider this strawberry rhubarb pie to be more of a modern pioneer recipe since I don’t think the early pioneers had much access to fresh strawberries or rhubarb. Those crops were probably not considered essential and weren’t a top priority crop.

Nonetheless, strawberries and rhubarb are certainly fun crops to grow in a modern pioneer homestead garden! I don’t grow strawberries in my homestead garden yet, although I would like to try a small crop of them despite the shaded woods where I homestead. However, I do have two plentiful rhubarb plants on the homestead that keep me well stocked with fresh rhubarb all summer long.

Aside from the berries and rhubarb, this pie only contains a few other simple ingredients to enhance the pie filling flavor and structure. The lemon juice, vanilla extract, and coconut sugar help balance out the tartness of the rhubarb and give the pie just the right sweetness level. The tapioca flour helps the pie filling set up so you don’t end up with strawberry rhubarb crisp on your plate instead of a pie slice!

Did you know that strawberry rhubarb pie day is June 9? We may be a week or two late, but I think strawberry rhubarb pie can be celebrated on any day of the year! Topped with some dairy-free coconut milk ice cream or served up with your favorite iced tea, this pie will offer you delicious flavor with every bite!

But not only is this pie bursting with flavor, it also contains nutritious, wholesome ingredients. Who said pie couldn’t be healthy? Here are some benefits of including strawberries and rhubarb in your diet:

  • Vitamin K- They are high vitamin K content helps maintain bone health.

Strawberry Rhubarb Pie Recipe Tips

This gluten-free strawberry rhubarb pie is super easy to make! The most intimidating part about making the pie might be making a grain-free and/or gluten-free pie crust and topping. But don’t worry, I have some pioneer recipes that can help with that! Making a pie crust is a great modern pioneer life skill to master in the homestead kitchen, so roll up your sleeves and give it a try!

Here are some tips for making and assmebling your strawberry rhubarb pie:

  • Pie Crust OptionsThese two grain-free pie crust options are both simple pie crusts to make and great for beginner pie makers. I also like to use this simple grain-free cassava flour pie crust recipe which is egg free. (Hint: You don’t have to roll out any of these pie crusts if you don’t want to, just pat them into the pie plate!)
  • Pie Topping– You can go with a crust topping or a crumble topping for this strawberry rhubarb pie. I used a gluten-free oat topping for my pie, but if you need to keep the pie completely grain-free, make sure you check out the grain-free crumble topping recipe I used for my peach pie.
  • Spill Guard– When the pie bakes, sometimes the filling splashes or spills over the edges. Place the pie plate on a rimmed cookie sheet to prevent the spills from burning in the bottom of your oven!
  • Sugar Alternatives– Any granulated sugar can be used in place of the coconut sugar in the pie filling.
  • Flour Alternatives– You can use arrowroot starch in place of the tapioca flour in the pie filling.

Gluten-free Strawberry Rhubarb Pie (nut free)

Ingredients

  • 2 1/2 cups fresh organic rhubarb diced
  • 2 3/4 cups fresh organic strawberries sliced
  • 1/2 cup organic coconut sugar
  • 1 tblsp. organic lemon juice
  • 1/2 tsp. pure vanilla extract
  • 1/4 cup Bob’s Red Mill tapioca flour
  • 1 unbaked grain-free pie crust

Gluten-free Crumb Topping

  • 2/3 cup gluten-free whole oats
  • 1/4 cup organic coconut sugar
  • 4 T. organic butter, cold
  • 1/4 tsp. organic ground cinnamon

Instructions

  • Preheat the oven to 395°F.
  • Wash the rhubarb and cut it into 1/2 inch pieces. Wash and hull the strawberries. Cut any large strawberries in half.
  • In a large mixing bowl, stir together the rhubarb, strawberries, coconut sugar, lemon juice, and vanilla extract. Add the tapioca flour and stir until everything is well mixed.
  • Pour into the unbaked pie crust.
  • In a food processor, combine the crumble topping ingredients. Cut the butter into chunks before adding it to the food processor. Pulse until large crumbles form.
  • Sprinkle the crumble topping evenly over the pie filling. Place the pie plate on a rimmed cookie sheet.
  • Bake for 20 minutes. Without opening the oven door, reduce the temperature to 350° F and bake for 40-45 more minutes.
  • If the crust or crumble topping begins to get too brown, cover it with aluminum foil and finish baking. The filling should be soft and bubbly when the pie is done.
  • Allow the pie to cool (about 4 hours in the fridge) before cutting and serving. Store leftovers in the fridge.

Notes

To get extra pie crust dough, you may need to make another batch of the pie crust. However, I have often rolled out the pie crust dough thin enough so that I have enough for the crust and extra for the topping.
