Grain-free Mississippi Mud pie is a delicious combination of chocolate and marshmallow! I love that this pie has such a rich flavor and a light consistency! The base layer has the texture of brownies and the marshmallow layer is made with homemade marshmallow fluff. For the topping, it has a delicious chocolate frosting that uses simple ingredients and can be whipped up quickly! I am sure you will love the taste and texture of this layered grain-free Mississippi Mud pie!
The Chocolate Base
One of my favorite parts of this Mississippi Mud pie is the chocolate base! I used one of my favorite grain-free brownie recipes to create the base for this pie. It works perfectly and tastes great in this pie! The texture is amazingly fudgy and the taste is perfectly chocolatey! I use low inflammation flours in this brownie recipe to make it healthier and grain-free!
Tapioca Flour– Tapioca flour is the modified version of cassava flour. It works well for thickening up recipes and gives them a nice light texture. You could probably swap out arrowroot flour for tapioca flour in this recipe if you needed too.
Coconut Flour– Coconut flour is a rich, heavy flour that also helps thicken up recipes. It can make baked goods become a little dry when used too much. Typically coconut flour recipes call for lots of eggs to help combat the dryness of the flour. Sometimes this causes the baked good to be too spongy or taste like coconut. I am happy to say however, that this brownie recipe is neither spongy nor does it taste like coconut!
The Marshmallow Layer
I love that you can make your very own marshmallow fluff for this pie! The fluff is easy to make and uses minimal ingredients! It always amazes me that you can start out with such few ingredients and end up with a large batch of sweet, fluffy goodness! This marshmallow fluff recipe is made with wholesome, healthy ingredients!
Raw Honey– Honey in its raw state is a powerful anti-inflammatory, antioxidant rich food! It is also anti-bacterial, anti-fungal, and contains soothing properties. Honey is rich in many nutrients and vitamins too!
Gelatin– Gelatin, when obtained from the right source, contains many beneficial properties. It is the refined version of collagen which is derived from muscle, bones, and skin of animals, usually beef. Because gelatin is derived from animal parts, it contains amino acids which help with bone and joint health.
The Chocolate Frosting
The chocolate frosting on this pie tops it off perfectly! This chocolate frosting is simple and can be made up quickly. I never liked making frosting until I found this recipe. This chocolate frosting recipe uses simple ingredients, requires minimal dishes, and can literally be made up in minutes! I love that it doesn’t contain too much sugar and that the sugar is a natural sugar, not a powdered sugar. You can easily swap coconut oil instead of butter in this recipe!
I know there are many variations of Mississippi Mud, so feel free to experiment with different layers! Chocolate pudding, whipped coconut cream, or a chocolate cookie crust can all be added to make this grain-free Mississippi Mud pie even muddier!
Grain-free Mississippi Mud Pie (nut free)
Ingredients
Chocolate Base
- 1 1/2 cups Enjoy Life mini chocolate chips
- 1/3 cup organic, grass-fed butter
- 1 tsp. pure vanilla extract
- pinch of salt
- 1/4 cup Bob's Red Mill tapioca flour
- 3 tblsp. coconut flour
- 2 free-range organic eggs
- 1/2 cup coconut sugar
Marshmallow Layer
- 1 cup pure, raw honey
- pinch of salt
- 2 tblsp. Great Lakes gelatin
- 2 tsp. pure vanilla extract
- 1/4 cup water
Chocolate Topping
- 2 tblsp. organic, grass-fed butter
- 1/4 cup pure maple syrup
- 1/4 cup Dagoba cacao powder
- 1/2 tsp. pure vanilla extract
Instructions
Chocolate Base
- Preheat the oven to 350 degrees F. Lightly butter a 9" glass pie plate.
- Melt 1 cup of chocolate chips and the butter in a large saucepan over low heat. Stir frequently.
- Once the chocolate and butter are combined, add the coconut sugar, salt, and vanilla extract. Stir until combined.
- Remove from the heat and allow the mixture to cool for a few minutes. You should be able to touch the mixture without it feeling too hot. Add the tapioca flour, coconut flour, and eggs one at a time. Stir until combined.
- Fold in the remaining chocolate chips. Pour the mixture into the pie plate. Bake for 20-25 minutes. The center should look gooey. Allow the brownie base to cool while you make the marshmallow layer.
Marshmallow Layer
- In a large mixing bowl sprinkle the gelatin over the 1/4 cup of water. Set aside.
- In a small sauce pan, whisk the honey, salt, and vanilla together over medium heat. Bring to a simmer and allow the mixture to heat up to 240 degrees F.
- Begin to beat the gelatin mixture on medium speed while slowly pouring in the honey mixture. It should take about 1 minute for you to pour all the honey mixture in while beating.
- Continue to beat the honey and gelatin for 8-10 more minutes. The mixture should double in size and become light and fluffy.
- Spread the marshmallow fluff over the cooled chocolate layer. If you have extra marshmallow fluff, pour it into another container and save for eating later!
- Allow the marshmallow fluff to set uncovered for at least 4 hours before adding the final chocolate layer.
Chocolate Topping
- To make the final layer, melt the butter in a small saucepan. Add the vanilla extract and cacao powder. Stir until combined.
- Add the maple syrup and stir until the frosting become smooth and creamy. Spread chocolate frosting over the marshmallow fluff. Your Mississippi mud pie is ready to be served!

Grain-free Mississippi Mud pie is a favorite in my house! My whole family loved it, so I had to put it on my ‘make again’ list.
