Making your own homemade graham crackers has never been easier! These grain-free graham crackers are simple and pretty much fool-proof. You can bake them into thin, crunchy graham crackers or leave them a little thicker for a softer texture…. either way will give you perfect graham crackers for making classic s’mores, using for a graham cracker pie crust, or for snacking on! The dough is soft and easy to work with and the crackers themselves bake up quickly. These graham crackers are a no-fuss modern pioneer recipe to have in the homestead kitchen!

Modern Pioneer Recipe

Store-Bought Substitute: One of the reasons why these graham crackers are a modern pioneer recipe is the fact that they can easily replace store-bought graham crackers! As a modern pioneer, my goal is to make from-scratch as many foods as possible instead of buying them at the store. And these graham crackers turned out to be the perfect substitute for gluten-free graham crackers that I used to buy.

Instead of going to the grocery store (or shopping online), I can whip up a batch of homemade graham crackers right in the homestead kitchen! They even last a long time and can be frozen for later. I have been able to keep my homemade graham crackers in an airtight container for up to 2 months without them spoiling or going stale, so their shelf-life is pretty stable.

Simple Recipe– Lastly, I want to mention how simple these graham crackers are to make! Achieving a soft, workable dough may seem daunting when working with grain-free flours. However, this recipe makes it simple and easy. The dough is not dry and crumbly but not super sticky either. Rolling out the dough and cutting out the crackers will take only minutes! It is also a no-chill dough, so you don’t have to schedule in chilling time when you want to make these crackers.

Ways to Use Homemade Graham Crackers

These grain-free graham crackers wouldn’t be a good substitute for store-bought graham crackers if they couldn’t be used for the some purposes… but thankfully, homemade graham crackers can be used in all the same ways you would use traditional graham crackers! Here are some ways you can use your homemade graham crackers:

These grain-free graham crackers also make for a great kid-friendly snack! You can make mini ‘fruit pizzas’ on them, dip them chocolate, or make peanut butter cracker sandwiches them. One of my favorite not-so-healthy ways to have these graham crackers is by enjoying them with some dairy-free frosting dip! You can also turn these graham crackers into ice cream sandwiches!

Recipe Questions

Can I make these graham crackers dairy-free?

Yes! You can make these graham crackers dairy-free by using a butter substitute or by using coconut oil. I prefer to use coconut oil since it is a healthy oil to use in place of butter. Make sure the coconut oil is melted when using it in the recipe. Since melted coconut oil is a more of a liquid than melted butter, you will have to add a little more cassava flour to get a workable dough. Start by adding 2 T. of additional cassava flour. If the dough still seems too sticky and soft, add up to 1/4 cup more cassava flour (adding 1 T. at a time) until the dough becomes workable.

Can I make these graham crackers egg free?

This recipe has not been tested egg-free. I have not tried using any egg replacements in this graham crackers, so proceed with an egg-free version at your own risk! That said, if you do try an egg-free version, I’d love to hear about it, just let me know in the comments section!

What if the dough is too dry and crumbly?

If the graham cracker dough seems too dry and crumbly, you will need to add more moisture. Add cold water 1 teaspoon at a time until the dough becomes easy to work with. Dry and crumbly dough can be caused by using too much flour (improper flour measurement), too small of an egg, or the butter not being melted enough.

What if the dough is too wet and sticky?

If the graham cracker dough is too wet and sticky, just add more flour 1 tablespoon at a time. Work the additional flour into the dough until you can form a smooth, soft, and pliable ball that doesn’t stick when you handle it. Add just enough flour to get a soft dough. If you add too much additional flour the dough will become stiff and will crack when you start rolling it out.

Can I use a different flour other than cassava flour?

This recipe has only been tested with cassava flour. I have used both Otto’s Naturals cassava flour and Anthony’s cassava flour when making these graham crackers. Both of those brands makes reliable cassava flour that performs well in any of the recipes on this blog. If you use a different brand of cassava flour, please be aware that it may alter or change the recipe and you may get different results. Different brands of cassava flour have different absorbency levels and can cause the dough to be too dry or too sticky.

Grain-free Graham Crackers (gluten-free)

Ingredients

  • 1 cup Otto's Naturals cassava flour
  • 1/2 cup coconut sugar or maple sugar
  • 3 T. organic, grassfed butter melted
  • 1 large pasture-raised, organic egg
  • 1 T. blackstrap molasses or raw honey
  • 1/4 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1 tsp. organic cinnamon
  • 1 tsp. vanilla extract

Instructions

  • Preheat the oven to 350°F. Line two baking sheets with parchment paper. Cut two additional pieces of parchment paper for rolling the dough out on.
  • In a large mixing bowl, combine the melted butter, coconut sugar, and egg. Stir until combined. Add the molasses and vanilla, stir well.
  • Add the flour, baking soda, sea salt, and cinnamon. Stir until a smooth dough forms. The dough should be soft but not sticky. You should be able to shape the dough into a ball and handle it without it sticking or cumbling.
  • Lightly dust one of the pieces of parchment paper with additional cassava flour. Place the dough on the parchment paper and flatten it slightly into a rough rectangle shape. Place the other piece of parchment paper on top of the dough and use a rolling pin to roll the dough out into a rectangle.
  • Roll the dough out to your desired thickness. For thin and crispy graham crackers, the dough should be about 1/8-inch thick. For thicker graham crackers the dough should be about 1/4-inch thick.
  • Remove the top layer of parchment paper. Use a pizza cutter to slice the dough into rectangles. I cut my graham crackers into 2×3" rectangles. Use a spatula to transfer each graham cracker onto the baking sheet. Repeat the rolling out and cutting process until all the dough has been used up.
  • Use a sharp knife to score a line across the middle of each graham cracker. Use a fork to make fork pricks above and below the score line on each graham cracker.
  • Bake the graham crackers for 12-15 minutes. Thinner graham crackers will bake for less time than thicker graham crackers. The graham crackers are done when they are just starting to brown at the corners.
  • Let the graham crackers cool completely before enjoying or storing in an airtight container.
