Grain-free Fudge Pie (nut free)

Grain-free fudge pie is the perfect pie for chocolate lovers! Even if you don’t qualify yourself as a chocolate lover (like myself), you will still love this pie, just like I do! It truly tastes like fudge and has a delicious fudgy texture! I love that this pie is made with wholesome ingredients, but still tastes amazing! My whole family loves this pie and I have used this same fudge recipe as the base for some of my other pie recipes. Grain-free fudge pie tastes delicious served with dairy-free ice cream or just eaten plain by itself!

Modern Pioneer Recipe

This grain-free fudge pie is a delicious modern pioneer recipe! I qualify it as a modern pioneer pie recipe since it is not made completely from scratch, although it has potential. I do use chocolate chips in this pie recipe, which help give it a fudgy, rich chocolate taste and texture.

Of course, you can by all means make your own chocolate chips! Which is something I have on my modern pioneer bucket-list to do! However, since I haven’t done so yet, I used store-bought chocolate chips in this pie. The rest of the ingredients are wholesome and simple though, making it an easy modern pioneer pie to whip up quickly!

Pie Crust Guide

One thing that I have learned while baking over 50 different pies is that certain pies go well with certain types of pie crusts. Some pies need a light, flakey crust while others are better with a sturdy, heavier crust. I have tried many different pie crust recipes and have learned which pie crusts pair well with which pies.

When I first started baking pies I needed to find a pie crust that was gluten-free, grain-free, and nut free. I managed to convert my original pie crust recipe over from gluten-free to gluten and grain-free. However, I soon realized that I needed more than one pie crust option. Here are some different ones that I created or tried and what pies they pair well with!

#1. Original Pie Crust

My grain-free original pie crust recipe can be found in my post Grain-free Pie Crust Recipes. It contains tapioca flour, coconut flour, cassava flour, and flax seeds as well as organic butter and an egg. I found that the original pie crust recipe requires a little more time to put together since you have to roll it out. The original pie crust recipe is a sturdy pie crust that goes well with:

#2. Pastry Pie Crust

I created the grain-free pastry pie crust recipe when I wanted a light, flakey pie crust to go with some heavier pie fillings like this fudge pie. This grain-free pastry pie crust recipe can be found in my Grain-free Pie Crust Recipes right along with the original pie crust recipe. It uses tapioca flour, coconut flour, an egg, and organic butter which can be switched out for coconut oil to make it dairy-free. This crust goes well with:

  • fudge pie!
  • brownie pie
  • custard pie
  • lemon meringue pie
  • coconut cream pie

#3. Chebe Pie Crust

I have also made a pie crust using Chebe all-purpose bread mix! Chebe is great because it is easy to make, grain-free, and can be made dairy-free too. Using a whole box of Chebe will also give you two pie crusts, which means you can add a top crust to your pie! Pie crusts made with Chebe are light and can be soft or firm depending on how long you bake it for. I use Chebe pie crusts for:

#4. No-Roll Oatmeal Pie Crust

Recipe: No-Roll Pie Crust by Oatmeal With a Fork

 I have tried this oatmeal pie crust for a few of my pies. I use homemade gluten-free oat flour, coconut sugar for the granulated sugar, and butter instead of olive oil. You could also use coconut oil instead of butter to make it dairy-free. The crust was easy to make and went well with some of my lighter pies like the vanilla pie recipe! I have used this crust with:

#5. Cassava Flour Pie Crust

Recipe: Cassava Flour Crust by Predominately Paleo 

When I first discovered this cassava flour pie crust I made it a lot! It was so easy to make and went well with many different pies. Cassava flour pie crust is grain-free, gluten free, nut free, and can be made without dairy! The only change I made was I used organic butter instead of palm shortening (you could use coconut oil). I have used this pie crust for these pies:

  • strawberry pie
  • French silk pie
  • raspberry pie

#6. Cookie or Graham Cracker Crust

I make cookie and graham cracker crusts using Pamela’s Simple Bites chocolate chip cookies or Pamela’s honey grahams. These crusts are easy to make and pair well with many different pies. #7. Otto’s Naturals Pie Crust

Recipe: Flakey Cassava Flour Pie Crust by Otto’s Naturals

Lastly, another grain-free pie crust that I have made a lot is this flakey butter pie crust by Otto’s Naturals cassava flour. This crust is made using cassava flour, lots of butter, some cold water, and a little bit of salt. I found that this grain-free pie crust is the flakiest pie crust I have tried yet and it is also a sturdy pie crust that still has a light, flakey texture. I like to use this pie crust for:

  • pecan pie
  • impossible pumpkin pie
  • quiche

Recipe Questions

How should I store this grain-free fudge pie?

Grain-free fudge pie can be kept at room temperature for up to 3 days as long as it is covered with an airtight covering. You can also keep it in the fridge for 4-5 days. I do not recommend freezing fudge pie.

Can I make this pie with different flavors?

Yes! I love making this pie using different flavors of chocolate chips. My favorite brand of chocolate chips to use is Lily’s chocolate chips, and they come in a variety of different flavors! For this particular pie, I used the Lily’s salted caramel baking chips which gave the fudge pie a perfect subtle caramel flavor. It was amazing!

Can I use any flour substitutes in this recipe?

I have not tried making any flour substitutes with this pie recipe. You can certainly use arrowroot flour/starch in place of the tapioca flour, but I have not tried using any substitutes for the coconut flour. Coconut flour is very absorbent and is a heavier flour.

How fudgy is this pie? How can I tell when it is done?

This fudge pie gets its name more from the rich, fudgy flavor of the pie rather than the texture. However, you can play around with the fudgy texture by modifying the bake time of the pie. If you want a pie with more of a fudgy, gooey center, bake the pie for less time. The pie shown in the pictures was baked for the full amount of time called for by the recipe and it has a soft yet firm texture with a rich, fudgy flavor.

The filling seems small in volume, does it fill a traditional 9″ pie crust?

When you pour the filling into the pie crust it may look like there is not much filling to fill a standard 9″ pie crust. Looks are deceiving with this pie filling though! The filling does puff up quite a bit when it bakes, creating a full looking pie when it is done baking. It may even be a good idea to put the pie plate on a baking sheet while the pie bakes just in case the filling decides to overflow the pie crust.

This grain-free fudge pie is super easy to make and is guaranteed to satisfy all chocolate cravings! I love using salted caramel chocolate chips in this pie recipe to give it a subtle caramel flavor that pairs well with the rich, fudgy texture!

Ingredients

  • 1 1/2 cups Lily's chocolate chips or Enjoy Life chocolate chips
  • 1/3 cup organic, grass-fed butter or coconut oil
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. sea salt
  • 1/4 cup Bob’s Red Mill tapioca flour
  • 3 T. coconut flour
  • 2 free-range organic eggs room temperature
  • 1/2 cup coconut sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 1 9" unbaked grain-free pastry crust

Instructions

  • Preheat the oven to 350° F.
  • Combine 1 cup of chocolate chips, 1/3 cup of butter, vanilla, and 1/2 cup of coconut sugar in a small saucepan over low heat. Stir periodically until everything is melted and smooth. Remove from the heat.
  • Combine the salt, baking soda, cream of tartar, tapioca flour, and coconut flour in a medium mixing bowl. Stir until combined.
  • Add the eggs in one at a time and stir until combined. Add the chocolate mixture and stir well.
  • Gently stir in the remaining 1/2 cup of chocolate chips. Pour into the unbaked pastry crust.
  • Bake for 20-25 minutes. The center will be firm. Allow the pie to cool before cutting and serving! For a fudgy pie, bake for 15-18 minutes so the center looks gooey.
  • Store leftovers at room temperature or in the fridge.
