I love having this french toast for breakfast, it’s sweet, soft, and filling. Serve this grain-free french toast with some fruit and a side of bacon to have the perfect start to any day!

Grain-free Bread for French Toast
When I first went on a grain-free diet, I had an especially hard time not being able to have bread. No more sandwiches, no more egg on toast, no more garlic bread, no more french toast. However, I found that there are actually many grain-free substitutes for breads, buns, and muffins! This version of grain-free bread is perfect for french toast or garlic toast. It makes a small loaf, so the slices may be a little small for sandwiches, but that depends on how big you like your sandwiches!
I found this bread very easy to make and work with. There are no grains, nuts, or gluten in this bread and it can also be made dairy-free! The texture is perfect, not eggy but not too dry either. The loaf has a nice firm crust but a soft, somewhat dense center. I also like that this grain-free bread doesn’t contain yeast, which some people need to avoid for dietary reasons.
It’s a no-knead, bread-machine-free, no-rise-time-required kind of bread recipe! That’s the kind of simple recipes I like!
About the Bread Ingredients
I chose to make the grain-free bread recipe using two simple, grain-free flours. Tapioca flour and cassava flour combine to create the perfect bread-like texture. Here are a few of the key ingredients in this bread and why I chose them:
- Tapioca flour– tapioca flour helps keep this bread light and gives it the correct texture, you can also use arrowroot in replacement for some of the tapioca flour.
- Cassava flour- cassava flour helps balance out the tapioca flour to keep the bread texture from becoming to stretchy, however this bread does not have a strong cassava flour taste.
- Eggs- the eggs help keep the bread together and prevent it from becoming too crumbly, they also contribute to the soft texture.
- Baking powder- the baking powder is what gives this bread some rise since it doesn’t contain yeast, make sure your baking powder is corn free though.
- Maple Syrup– maple syrup helps give the bread a little bit of a sweet taste, similar to what a yeast bread would taste like.

Recipe Tips for French Toast
French toast is one of my favorite breakfast foods, but I also like to have it for lunch or dinner too! I love to serve this french toast with butter, maple syrup, and fruit. Berries and bananas are my favorite fruits to have with french toast. Organic, non-GMO bacon or all-natural sausage also pairs well with french toast. One thing that I really like about this recipe is that it makes enough for me to freeze some leftover slices for another meal! Here are a few tips when making this french toast:
- When mixing up the egg mixture, I generally do one egg per person and one tablespoon of milk per egg.
- Soaking the bread in the egg mixture softens the bread. So let it soak for as long as you want!
- I like to use a cast iron skillet for frying my french toast in, but you can also use a standard frying pan.
- Butter, coconut oil, bacon fat, or ghee can all be used to fry the french toast slices in.
- To know if your frying pan is hot enough to fry the french toast, sprinkle a few drops of water onto the frying pan. If it sizzles than the pan is ready for frying!
- Leftover french toast slices freeze well for later! When you want a quick breakfast, just un-thaw the pre-made french toast slices and heat them up in the toaster oven!

Grain-free French Toast (nut free)
Ingredients
Grain-free Bread (nut free)
- 4 large pasture-raised, organic eggs room temp
- 1/4 cup organic, grass-fed butter or coconut oil
- 2 tbsp. pure maple syrup
- 1/3 cup water
- 1 cup cassava flour
- 1 1/2 cups Bob’s Red Mill tapioca flour
- 1/4 tsp. salt
- 1 tsp. baking powder, corn free
- 1 tbsp. tapioca flour for kneading the dough
French Toast Mixture
- 3 large organic, pasture-raised eggs
- 3 tbsp. organic coconut milk
- 1 tsp. organic, ground cinnamon
- 1 tbsp. organic, grass-fed butter for frying in
Instructions
Grain-free Bread
- Preheat the oven to 350 degrees F. Butter an 8.5 inch by 4.5 inch nonstick bread pan.
- In a small saucepan, heat the butter and maple syrup over low heat until the butter is melted. Stir occasionally.
- In a large mixing bowl, whisk together the cassava flour, tapioca flour, salt, and baking powder. Add the melted butter mixture and give the mixture a few stirs, then add the eggs and the water. Stir until everything is combined.
- Sprinkle the additional 1 tablespoon over the dough and use your hands to knead the dough into a bread loaf shape. You can sprinkle additional tapioca flour onto the dough if needed. Place the dough into the buttered bread pan.
- Place the bread pan in the oven and bake for 30-35 minutes. The bread should sound hollow when you knock on it. Once the bread is done, remove it from the bread pan immediately and place it on a cooling rack.
- Allow the bread to cool completely before slicing. You can cut the slices into your desired thickness. For french toast, thinner slices tend to work better since they soak up the egg mixture better.
French Toast
- In a shallow bowl, whisk together the eggs, milk, and cinnamon. I like to use a fork for whisking my egg mixture. Set a few of your bread slices into the mixture. Turn them over to coat both sides.
- Heat a large frying pan or cast iron skillet over low heat. Add a portion of the 1 tablespoon of butter to the pan. Once the pan is hot (sprinkle some water on the pan and see if it sizzles), place the bread slices that have been soaking in the egg mixture onto the pan. Allow the bread slices to fry for about 1-2 minutes on each side.
- Continue the process of coating the bread slices in the egg mixture and frying them. Add more butter to the pan as needed. You can serve the french toast with butter, maple syrup, fruit, or other toppings!
