I think you will be surprised with how ‘traditional’ this grain-free cinnamon bread turns out! It is the perfect from-scratch recipe to create in your homestead kitchen!

This grain-free cinnamon bread is the perfect pioneer recipe for you to try! While cinnamon bread probably didn’t become too popular until the later days of homesteading, making any kind of bread was an important part of the pioneer lifestyle.

The simplicity and easiness of this bread recipe is the perfect way to introduce yourself to making bread. No yeast, no rise time, no bread machine…. this recipe is super simple and wholesome! I feel like baking with grain-free flour is easier than baking with traditional flours, especially when it comes to making bread. But then again, grain-free and gluten-free flour is all I have ever worked with, so maybe I’m a little biased.

Sometimes grain-free breads lack the traditional yeasty flavor and soft fluffiness of traditional breads, but with the right flour combinations, you can still get pretty close with grain-free flours. I think this grain-free cinnamon bread is the closest I have ever gotten to mimicking a traditional sweet-bread recipe. The texture is just so perfect!

Another thing that was amazing about this bread was that it was such a hit with my whole family! Grain-free or not, everyone loved the taste and texture of this bread! Homemade Bread Recipe Tips

Grain-free cinnamon bread is pretty straightforward and simple to make. But, I just can’t help but give you a few recipe tips to ensure this bread recipe turns out just as good as I am bragging about. Whether it’s baking tips or recipe substitutions, here are a few tips for helping you make this grain-free cinnamon bread.

Cinnamon Bread Tips:

  • DF Option– You can make this bread dairy-free! Just use coconut oil instead of butter in the recipe!
  • Tapioca or Arrowroot– You can substitute arrowroot flour for the tapioca flour in this recipe.
  • Egg Substitutes– This cinnamon bread is not egg free, and I don’t recommend using an egg substitute. The eggs in this recipe give the bread some structure and help give it some loft.
  • Baking Powder Tip– I highly recommend getting your hands on some Otto’s Naturals baking powder, which is aluminum free and corn free. However, you can substitute in an additional 1/4 tsp. of baking soda plus a 1/2 tsp. of cream of tartar for the baking powder.
  • DF Milk Alternatives– You can substitute in other dairy-free milk substitutes for the coconut milk. I use coconut milk beverage without the cream in my bread.
  • Melted Oil– Make sure your butter or coconut oil is melted, this will ensure the consistency of the batter is correct.
  • Room Temp Ingredients– Room temperature eggs are important as they incorporate into the batter better and actually help the bread rise.
  • Beating or Stirring– When combining the butter, sugar, and eggs, you can use handheld beaters, stand beaters, or simply vigorously stir the ingredients together.
  • Greasing the Pan– I find that coconut oil works wonderfully for preventing the bread from sticking to the loaf pan. Just use your fingers to spread a thin layer of coconut oil into the loaf pan.
  • Freezing– This bread freezes well! You can freeze the whole loaf or freeze individual slices.

Grain-free Cinnamon Bread (gluten-free)

Ingredients

  • 1/2 cup organic, grass-fed butter melted
  • 1/2 cup organic coconut sugar
  • 4 large pasture-raised, organic eggs room temp.
  • 1 tsp. pure vanilla extract
  • 2 cups Bob's Red Mill tapioca flour
  • 1/2 cup coconut flour
  • 1 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1/2 cup coconut milk
  • 1 tsp. ground organic cinnamon

Cinnamon Mixture

  • 3/4 cup organic coconut sugar
  • 1 T. ground, organic cinnamon

Instructions

  • Preheat the oven to 350° F. Lightly coconut oil an 8"x4" loaf pan.
  • Prepare the cinnamon filling mixture by stirring together the coconut sugar and cinnamon in a small mixing bowl.
  • In a large mixing bowl, combine the melted butter, coconut sugar, and eggs. Beat until creamy. Add the rest of the bread ingredients and stir until everything is combined thoroughly.
  • Spread half of the batter into the loaf pan. Sprinkle on the cinnamon mixture, reserving about 2 T. for sprinkling on top of the loaf. Use a knife to cut a zig-zag pattern through the cinnamon sugar and batter. Spread the remaining batter on top. Sprinkle the remaining cinnamon sugar mixture on top.
  • Bake for 35-40 minutes. The bread should bounce back when pressed gently. Let the loaf cool for 10 minutes, then gently remove the loaf from the pan and let it cool completely on a cooling rack before slicing and serving.
  • Store at room temperature in an air tight container for up to 3 days or in the fridge for up to 5 days. This bread freezes well too.
