What if you could make a cookie that tasted just like a campfire s’more? Well these gluten-free s’more cookies come about as close as you can get to a non-campfire s’more! The taste and texture are spot on for the slightly crunchy graham, soft chocolate, and gooey marshmallow of a campfire s’more. Not only are these s’more cookies insanely delicious, but they are also allergy-friendly, simple to make, and easy to store! They are the best s’more cookies I have ever had and I guarantee they will be a hit with modern pioneers of all ages on your homestead!

Modern Pioneer Recipe

While traditional campfire s’mores don’t date as far back as the early pioneers, they definitely count as a modern pioneer recipe! In my mind, a modern pioneer tries to make healthy, sustainable choices when it comes to meal prep and food choices. These s’more cookies are allergy-friendly and homemade.

Here’s a few things that make these cookies a healthier option:

  • they are made with gluten-free ingredients
  • these cookies are also nut free, so they don’t contain tree nut, coconut, or peanut ingredients
  • there is no corn in any of the ingredients or products used to make these cookies

Every modern pioneer has to make sustainable choices that fit their lifestyle. I wanted to make these s’more cookies a simple, quick, and easy recipe that any modern pioneer could make. That’s why I opted for using store-bought ingredients like the non-GMO marshmallows, gluten-free graham crackers, and allergy-friendly chocolate chips.

However, you can easily make all those ingredients from scratch! Check out this gluten-free s’more pie for an easy, all-natural marshmallow recipe. There are also multiple recipes for gluten-free graham crackers and homemade chocolate that you could make to use in these cookies. So, if you’re feeling daring, go ahead make these cookies completely from scratch!

Easy S’mores for Any Time!

Before we get into the ingredients of these cookies, I want to discuss how simple these s’more cookies are to make. S’mores are a traditional campfire or camping treat that are fun to make over the open fire. I love having a campfire and cooking meals and desserts in my cast iron Dutch oven, cast iron skillets, or cast iron pie irons!

However, cooking over the open fire takes time, can be messy, and can be dangerous if you don’t know proper campfire cooking procedures. These s’more cookies take care of not only the messy and dangerous part, but are also very quick and easy to make.

They are great option if you…

  • a. can’t have a campfire
  • b. want to minimize mess and supplies
  • c. need a delicious, summer dessert that is allergy-friendly
  • d. want to serve s’mores to a crowd

These gluten-free s’more cookies taste almost like the real deal! If I didn’t like making traditional s’mores so much, I might just always have these cookies on hand instead!

I’m a s’more fan and love trying to make new recipes using the traditional s’more ingredients. Of course, I love these s’more cookies, but I have also tried these delicious gluten-free s’more bars and this amazing dairy-free s’more pie. I’m sure there are going to be many more s’mores and s’more recipes that I am going to try, but for now, I want to enjoy these s’more cookies!

Ingredients for S’more Cookies

When it comes to choosing ingredients for these s’more cookies, I want to provide a few helpful tips that will help you narrow down your ingredient options so you can make healthy, sustainable choices. Basically, these cookies are made using flour, sugar, butter, and an egg to create the cookie base and then s’more ingredients to provide the taste and texture of a traditional s’more.

Flour & Sugar-

For the flour, I chose to use grain-free cassava flour. Cassava flour is the best grain-free flour to use as a substitute for traditional white flour. For the sugar, I chose to use maple sugar. Maple sugar is an all-natural, granulated sugar that helps keep these cookies healthy and sweet. I like to use maple sugar over coconut sugar since coconut sugar yields a very dark-colored cookie. Maple sugar also bakes down more like traditional sugar, which yields a smoother cookie.

Butter-

I used organic butter made from pasture-raised cows. Technically I can’t have traditional dairy in my diet, but I have learned that I do fine with organic butter. To make these cookies dairy-free simply use your favorite dairy-free butter alternative.

Egg

The egg in these cookies mainly serves to help hold the cookies together. If you’re feeling adventurous, you could try using a binding egg substitute instead of the egg to help the cookies stay together. 

S’more Supplies

For the s’more ingredients, I have found a few allergy-friendly brands that I highly recommend. Two graham cracker brands that I use are Pamela’s gluten-free graham crackers or Kinnikinnick gluten-free graham crackers. Pamela’s is gluten-free and corn free. Kinnikinnick is gluten-free, corn free, dairy-free, and egg free.

For the marshmallows, I buy Dandies brand marshmallows. They are gluten-free, corn free, dairy-free, and nut free. Lastly, for chocolate I have several favorite options. For the chocolate chips, I use Enjoy Life chocolate chips which are free from the 8 common allergies. I also like to use Lily’s Sweets chocolate chips if I am trying to reduce the amount of refined sugar in the cookies.

You can also use chopped chocolate bars instead of chocolate chips in these cookies! Again, my favorite chocolate bar brands are Enjoy Life or Lily’s Sweets. I personally like using the Lily’s salted caramel chocolate bar in my s’more cookies! It adds a fun hint of caramel flavor to the cookies!

How to Store S’more Cookies

Since these gluten-free s’more cookies are so easy to make, I also wanted to come up with an easy way to store and transport these cookies. In my family, s’mores are a traditional camping treat, so I knew I had to find a way to make these s’more cookies travel-friendly. 

Before you store the s’more cookies in any way, you must make sure they are completely cool. Of course, feel free to enjoy them while they are warm, but just make sure they are cool before you store them for later or transporting. Once the cookies are cool, you have several options:

  • At Home Storage– store in an airtight container for 5-7 days in a cool, dry place
  • Fridge– you can store these cookies in an airtight container in the fridge to extend their shelf life up to 10-14 days
  • Freezer Storage- freeze in an airtight container with a layer of parchment paper between cookies if they need to be stacked, unthaw before enjoying if you don’t want hard marshmallows
  • Travel Storage- any one of the above methods work for travel too, you can also transport them in a silicon stasher or a homemade re-usable sandwich bag

S’more Cookies Recipe Tips

Quick, easy, and simple are the three best words that describe making these cookies. That being said, I always enjoy it when recipes have some quick tips that go along with them, so I would like to give you a few helpful tips for when you go to make these cookies:

  • Mini vs RegularMini marshmallows work best in these cookies, but you can also cut whole marshmallows into small pieces to use instead.
  • Crumbled or Crushed?– Don’t finely crush your graham crackers! The graham cracker chunks add texture to the cookies and provide more graham flavor.
  • Chocolate Sizes– If you are using chocolate bars instead of chocolate chips, you can chop the chocolate bar into as big or as small pieces as you want.
  • Butter– Make sure the butter is almost completely melted to ensure the right cookie batter consistency.
  • Toppings– To make it look like your cookies are loaded with s’more goodness, save some the crushed graham cracker, extra marshmallows, and chocolate chips for topping the cookies. Add some toppings to the cookie dough balls before they bake and then fill in any gaps with more toppings as soon as the cookies come out of the oven.
  • Marshmallow Tip- You can mix the marshmallows into the batter, or you can do what I did and place them on top of the cookies before they bake. I find that when they are mixed into the cookie dough it creates a more ‘lumpy’ cookie, so I prefer putting them on top.

Gluten-free S’more Cookies (nut free)

Ingredients

  • 1 cup + 2 T. Otto's Naturals cassava flour
  • 1 medium free-range, organic egg
  • 1/2 cup + 2 T. organic, grass-fed butter, mostly melted
  • 1 cup maple sugar
  • 1/4 tsp. baking soda
  • 1/4 tsp. cream of tartar
  • 1 tsp. vanilla extract
  • 1/2 cup chocolate chips
  • 1/4 cup Lily's salted caramel chocolate bar, chopped (optional)
  • 8 gluten-free graham crackers, crumbled
  • 1/2 cup mini marshmallows

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • If you haven't already done so, break the graham crackers into chunks and pieces. Chop the chocolate bar into small pieces. Set the graham crackers and chocolate aside along with the chocolate chips and mini marshmallows.
  • In a large mixing bowl, combine the mostly melted butter, maple sugar, egg, cassava flour, baking soda, cream of tartar, and vanilla extract. Stir until a smooth cookie dough forms.
  • Fold in 2/3 of the crumbled graham pieces and the chocolate chips. Using a cookie scoop or a tablespoon, place scoops of the dough onto the cookie sheet. These cookie will spread out, so leave at least 2" between each cookie.
  • Press some more graham cracker pieces into the top of each cookie dough ball, flattening the ball slightly. Add some of the chopped chocolate bar or chocolate chips and 4-5 mini marshmallows per cookie.
  • Bake for 8-10 minutes. The edges of the cookies should be lightly browned. As soon as the cookies come out of the oven, add more toppings if desired.
  • Cool for 5-7 minutes before moving the cookies to a cooling rack to finish cooling. Store in an airtight container at room temperature or freeze for later.

Gluten-free s’more cookies are super easy to make, have the taste and texture of an actual campfire s’more, and are allergy-friendly! They make the perfect modern pioneer treat and can easily be packed on camping trips or travel adventures. For me, these cookies bring back good memories of camping, campfires, and family time…. so they will definitely be an essential dessert to have stocked in my freezer this summer!
