Lunch, snack, dinner, dessert! You name it, this granola is healthy enough to eat all day long! The only thing your missing is your vegetables, and who wants vegetables in their granola?! I used to think of granola as mainly a breakfast food, but after going on a low inflammation diet, I found that it was also a fantastic anti-inflammatory snack too!
And it doesn’t stop there! I love seeing what different food combinations I can do with this granola. It’s so delicious that it can be used for a variety of meals! Try these ideas:
- breakfast bowl– have a bowl of it for breakfast with coconut milk or coconut yogurt
- smoothie topper– top off your dairy-free smoothie with some peanut butter granola
- bowl topper– add it to your smoothie bowl, acia bowl, yogurt bowl, or ice cream bowl!

Modern Pioneer Kitchen: Granola Recipe Ideas
I love making granola recipes! They are typically very adaptable and have so many flavor options! For me, I love granola recipes that have lots of oats and sunflower seeds in them. If you prefer other nuts, seeds, or whole grains, those can be thrown into the mix too!
As for flavors, I have seen many different granola flavors and have tried several myself. Now, I am being completely honest when I say this, but I think that this peanut butter granola recipe is probably my favorite flavor! However, if you would like to see what other flavors are out there, here is a little list of the recipe or brands that I have tried and enjoyed:

When I don’t have time to make my own granola my favorite store bought substitute is the Purely Elizabeth blueberry hemp granola. It is gluten-free, sweetened with coconut sugar, and uses coconut oil in stead of butter or canola oil. I love how crunchy and flavorful it is!
Another tasty granola product that I have stumbled across are the Bear Naked granola bites. They are like a combination of granola and a granola bar. Basically little bit size pieces of granola bar that have the goodness and crunchiness of granola. They are delicious! I like the peanut butter and honey flavor. They make a great trail food when paired with jerky!
Peanut Butter Granola Recipe Tips
Like I said earlier, this peanut granola recipe is super easy and simple to make! However, I always like to give you a few tips to make sure this recipe turns out just as good as I promised it would be!
Here are my recipe tips for this peanut butter granola:
- Mix the Dry: Stir all the dry ingredients together before adding the wet ingredients. That ensures that all the seeds and oats are thoroughly combined and distributed.
- Sufficiently Melted: Make sure the coconut oil is completely melted in the peanut butter + maple syrup mixture, that way you don’t have any coconut oil clumps in your granola.
- Timing: As soon as the coconut oil is melted, remove the peanut butter mixture from the heat. If it stays on the heat too long it will stiffen up and be hard to stir into the dry ingredients.
- Stir it Good!: Thoroughly mixing the wet ingredients into the dry will help you get some good granola clumps!
- Optimize Granola Chunks: For optimized clumping, turn convection on if your oven has convection. Even if you don’t have convection, you will still get some pretty decent chunks, the granola will just have to bake for longer.
- Gentle Stirs During Baking: For optimized chunkiness, be gentle with your stirring between baking sessions. When the granola is done baking, DON’T stir it! Don’t even touch it! The granola will cool and you will have amazing peanut butter granola chunks!
Recipe Substitute Tips:
- Seed Substitutes: For substitutes, I think you could probably substitute or switch out different seeds or nuts in this recipe. You could substitute in pumpkin seeds or even nuts to add more variety in this recipe.
- Coconut Free: The shredded coconut in this recipe does not have a bold flavor, however if you are not a coconut fan or are allergic to coconut, you can leave the coconut shreds out and just add more oats or a different seed/nut. For the coconut oil, use butter as a substitute.
- Peanut Butter– You can use any nut or seed butter in this recipe that has a similar consistency to creamy peanut butter. Just keep in mind it will alter the taste!
Now lets get down to business! If you are like me, the chunks are everything in a granola recipe, and this peanut butter granola is like chunky heaven! Lots of chunks filled with peanut butter and sweetness! Go ahead, give this recipe a try, it’s easy, simple and fun.
Gluten-free Peanut Butter Granola
Ingredients
- 3 1/2 cups Bob's Red Mill gluten-free rolled oats
- 1/2 cup organic sunflower seeds
- 1/4 cup organic shredded coconut
- 2 T. organic hemp seeds
- 1 T. organic chia seeds
- 2 T. organic quinoa
- 1/2 tsp. organic cinnamon
- pinch of sea salt
- 1/3 cup pure maple syrup
- 1/2 cup organic peanut butter
- 2 T. organic coconut oil
Instructions
- Preheat the oven to 325° F. Line an 11×14" baking sheet with unbleached parchment paper.
- In a large mixing bowl, combine all of the dry ingredients.
- In a small saucepan, melt the coconut oil together with the peanut butter and maple syrup. Stir periodically to ensure everything is combined. Pour the peanut butter mixture into the dry ingredients and stir thoroughly to combine.
- Spread the granola out evenly on the baking sheet. Bake for 15 minutes and then gently stir the granola. Bake for 15-20 more minutes. The granola should be lightly browned. Allow the granola to cool completely without stirring it so that the chunks can form.
- Note: If you have a convection oven you can bake the granola for 10 minutes with convection turned on, stir the granola, then bake for a final 10 minutes with convection still turned on.
