Clinging stone varieties have flesh that clings tightly to the pit, semi-freestone varieties have flesh that clings slightly to the pit, and free-stone varieties have flesh that hardly clings to the pit at all.

If you are opting for large bars, then cut the peach bars into 18 pieces. For smaller pieces, cut the peach bars into the classic 24 pieces.
