Super simple ingredients. Super easy to make. But insanely delicious! This gluten-free cheesy sausage and potatoes dish is a favorite on my homestead! The perfectly baked, soft potato slices covered in melted, cheesy goodness and complimented by savory breakfast sausages turns this dish into a comfort food on par with mac ‘n’ cheese. All you need are a few simple produce items, some healthy breakfast sausage, a few dairy (or dairy-free) products, and some seasonings. This dish whips up in a matter of minutes and is the perfect meal for a cozy homestead dinner!
Homegrown & Homemade– As with all my modern pioneer recipes, I try to keep the ingredients simple and wholesome. This recipe requires a few homegrown produce items and some dairy products that can either be homemade or sourced sustainably. The dairy products can also easily be replaced with dairy-free products to make the meal dairy-free.
I like using homegrown new potatoes in this dish. A homegrown onion and homegrown garlic rounds out the produce needs for this recipe. For the dairy products, I like to use grass-fed butter (which I can have despite having a dairy intolerance). For the cheese and yogurt, I use a dairy-free cheese alternative and coconut milk yogurt. Eventually I will use homemade dairy-free yogurt once I get a yogurt recipe perfected!

Potatoes– This dish can easily be made with whatever potatoes you have stocked in the homestead pantry. However, my favorite potatoes to use are new potatoes. New potatoes are potatoes that haven’t been cured. They have a softer peel and tend to bake up faster than cured potatoes.
Other potato options you could use are russet potatoes, Yukon gold potatoes, red potatoes, or even fingerling potatoes! If you are buying potatoes, buy organic potatoes to avoid using potatoes that have been treated with pesticides or herbicides.
If you are using a cured baking potato (just about any baking potato in the grocery store), then you may want to pre-boil the potato slices before making the dish. Place the potato slices in a pot of boiling water and boil them for 5 minutes. Drain the potato slices and proceed with making the recipe. This will get a jump start on the cooking process and ensure the potatoes are soft when the cheese is bubbly.

Sausage– You can use your favorite breakfast sausages in this dish! I like to use breakfast sausages that I can easily slice into circles to mix into the potatoes. However, you can also use a breakfast sausage that you would break up and crumble into the potato mixture. I like to use my homemade venison sausage links or Cascadian Farms breakfast links.
Onion & Garlic– The onion and garlic lend to the savory flavor of this dish. I recommend using a mild flavor onion, like candy onions, and I have even used chopped pearl onions before! You could also use a red onion, which tends to have a sweeter flavor. I like to chop my onion to mix into the potatoes, but you could also slice the onion instead.
Dairy Products– Use organic butter, cheese, and yogurt in this recipe. Since I have certain dairy intolerances, I like to use dairy-free mozzarella cheese and dairy-free coconut milk yogurt. I like the flavor of mozzarella cheese, but you can easily use whatever cheese you prefer. I do not recommend subbing out the yogurt for milk or any other dairy product since the yogurt helps create a thick, creamy cheese mixture with the potatoes.
You can easily make these cheesy sausage and potatoes dairy-free! I like using dairy-free mozzarella cheese (either Daiya or VioLife) and dairy-free coconut milk yogurt. You could also use almond milk yogurt, cashew milk yogurt, or oat milk yogurt. For the butter, use olive oil or a dairy-free butter substitute.
I like to serve this dish as a main meal, but it can also be used as a side dish as well. When serving it as a main meal, I make sure the dish is loaded with breakfast sausage for protein. As a side dish to go with the sausage and potatoes, I stick to veggie side dishes. During the summer, I usually serve a side salad made with homegrown lettuce and carrots. During the fall and winter, I stick to warm veggies like steamed peas, roasted Brussels sprouts, or steamed green beans.
Technically you can freeze the leftovers, but the texture will be compromised, especially if you are using dairy-free cheese. If the dish is made with organic whole milk cheese and yogurt, the leftovers will freeze and unthaw just fine. Just reheat the unthawed leftovers before enjoying them. If the dish is made with dairy-free alternatives, I find that the unthawed leftovers lack the creamy texture as when the dish is served fresh. Thankfully, the leftovers will last for 4-5 days when stored in an airtight container in the fridge.
Also, if you need to serve more people or want more leftovers, you can easily double the recipe and make it in a 9×13″ glass baking dish instead of an 8×8″ glass baking dish.
Yes! You can use sweet potatoes, Japanese sweet potatoes, or even yams instead of new potatoes or baking potatoes! I find that sweet potatoes and yams require less baking time than other potatoes, so start by baking the dish for 20 minutes, then check the softness of the potatoes for doneness. Add more time as needed until the potatoes are soft and the cheese is bubbly.
If you have a convection toaster oven, you can easily make this dish in the toaster oven instead of heating up the kitchen oven! Prepare the dish as normal and just preheat your convection toaster oven to 350°F with the convection turned on. Once preheated, bake the dish for 30-35 minutes. Since you are baking in a smaller oven with convection, the cook time will be less.
