Modern Pioneer Recipe

These gluten-free blueberry flax muffins are a modern pioneer recipe. I find it very unlikely that muffins tins would have been a top priority to pack in the covered wagon, so I think muffins didn’t become pioneer food until much later. Either way, I am a muffin lover! Muffin tins are a staple in my homestead kitchen. I like to use stoneware muffin pans which are healthier to bake with and last a lifetime!

I also like to use non-bleached parchment muffin liners, which are way healthier than colored, generic muffin liners (no matter how pretty and fancy they look!). Personally, I like the look of the rustic, brown parchment liners on my muffins!

Back to the blueberry flax muffins… what makes these muffins an excellent modern pioneer recipe is the fact that they are allergy-friendly, super easy to make, and contain wholesome ingredients. One of the main ingredients in these muffins, flax seeds, is bursting with so much nutrition and benefits, you can’t help but classify these muffins as healthy!

Why Flax?

I like a good old traditional, light and fluffy muffin, so you may be wondering why I would create a muffin recipe that uses flax seeds? Don’t get me wrong, I love seeds and all, but in my baked goods, I like to stick to more traditional ingredients, with a few exceptions. These muffins are one of those exceptions!

I was inspired to create flax muffins after trying Flax4Life blueberry muffins. Which, by the way, are delicious! After examining the ingredients, I realized that I could try and make my own variation of those muffins! The flax muffins that I created have a soft, moist texture and are amazingly flavorful! While they aren’t exactly like the Flax4Life muffins, they will do in a pinch and are still insanely delicious!

The ground flax seeds do not have a powerful taste and the natural sweetness of the blueberries shines through in every bite. By using oats and flaxmeal as the only flour in these muffins, it makes these gluten-free blueberry flax muffins both low inflammation and full of healthy fiber.

Not only do flax seeds create a great texture for these muffins, they also provide some amazing health benefits! Here are just a few of the benefits you will receive when you consume these flax-based muffins!

Blueberry Flax Muffin Benefits:

  • Flax seeds are anti-inflammatory and anti-oxidant rich. This compliments the anti-inflammatory properties of oats and the anti-oxidant richness of the blueberries.
  • Flax seeds are a great source of omega 3 fatty acids.
  • The high fiber (provided by both the oats and the flaxmeal) in these muffins aids with digestion.
  • The linolenic acid in flax seeds helps protect blood vessels.
  • Flax seeds are a good source of vital vitamins and minerals like B vitamins, vitamin E, calcium, copper, and magnesium.
  • Ground flax seeds make the vitamins and minerals more accessible for the body to use than whole flax seeds.

So Many Uses!

Have I mentioned before… I love muffins!? Which is why I would love to share with you the many ways I incorporate muffins into my diet. I know, they aren’t essential like vegetables and protein are, but they definitely add variety and little bit of excitement to my daily meals whenever I make them!

I use muffins as a breakfast food, a filling snack option, a lunch food, a dinner side, and as a travel food.

These gluten-free blueberry muffins make a great breakfast option! They are filling, have great nutrients to start the day with, and are a quick and easy breakfast to grab on the go. They also make a good, hearty snack, and are sweet enough to be a delicious dessert! Having one of these muffins as a mid-afternoon snack gives me energy to do homestead tasks like walking the dogs, doing chores, and making dinner!

Along with these blueberry muffins, I also like to regularly whip up a few of my other favorite muffin recipes. As you will soon see, chocolate chip muffins are my absolute favorite variety of muffin! Here are some of the recipes I like to make:

Ingredient Guide

Since there are so many nutritious, wholesome ingredients in these muffins, I thought I’d go over some of them to explain why I included them in the recipe. Knowing what the ingredient does in the recipe can also help if you want to experiment with substitutions.

  • Gluten free whole oats– I used gluten free oats in these muffins to keep them low inflammation without using other grains. If you do try to substitute in other flours, they need to be very absorbent to keep the muffins from being too moist.
  • Organic ground flax seeds– The ground flax seeds give these muffins a great texture. I would not substitute another ingredient for the flax seeds. Also, the flax seeds must be ground in flaxmeal, not whole.
  • Free range, organic eggs– I only use free-range, organic eggs because they are the most nutritious. The eggs help hold these muffins together. I have not tried egg substitutes in these muffins.
  • Grass fed, organic butter– You can use coconut oil instead to make these muffins dairy-free!
  • Pure maple syrup– Pure maple syrup is a natural sweetener that is relatively low on the glycemic index. You can use honey instead but it loses its nutrients when it is baked.
  • Coconut sugar– I use coconut sugar because it is a natural granular sugar that is low on the glycemic index, which means it is less likely to affect your blood sugar.
  • Organic blueberries– I used frozen, organic blueberries in these muffins. I have not tried them with fresh blueberries, but I’m pretty sure fresh berries would work just as well!

Recipe Tips

Now that you know a little bit about the ingredients, I would like to go over some recipe tips for when you make these muffins. Keeping these tips in mind while you make your gluten-free blueberry flax muffins will ensure they turn out perfectly!

  • Measure out the oats, then grind them into flour. I have not tried this recipe with pre-made oat flour, however, if you do want to use pre-made oat flour instead, I recommend starting off with 1 3/4 cup of oat flour and then adding more as you see necessary.
  • If you are using whole flax seeds, grind them into flaxmeal first, then measure out the amount needed.
  • You can use one whole egg in place of the two egg whites.
  • To make the muffins dairy-free, use coconut oil or your favorite butter substitute. Just make sure it is in a liquid form so that the batter consistency stays the same.
  • You can use maple sugar in place of the coconut sugar and honey in place of the maple syrup.
  • I like whole blueberries in the muffins, but you can feel free to chop the blueberries up if that’s what you prefer.
  • The batter will seem thick and dry compared to other muffin batters. Don’t worry, the muffins aren’t dry!
  • For filling the muffin liners, fill them to the brim for robust muffins!

Ingredients

Blueberry Muffins

  • 2 cups Bob’s Red Mill GF oats ground into flour
  • 1 cup Bob’s Red Mill ground flax seeds
  • 2 large organic, free-range eggs room temp
  • 2 large organic, free-range egg whites
  • 2 tsp. organic ground cinnamon
  • 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/4 cup organic, grass fed butter (melted) or coconut oil
  • 1 tsp. pure vanilla extract
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut sugar
  • 1/2 tsp. sea salt
  • 1/3 cup warm water
  • 1 cup frozen blueberries

Instructions

  • Preheat the oven to 375 degrees F. Line a stoneware muffin tin with 9 parchment paper muffin cups. 
  • In a large mixing bowl, beat together the melted butter, eggs, egg whites, vanilla extract, and maple syrup. 
  • Add the oat flour, flax seeds, coconut sugar, baking soda, baking powder, cinnamon, and salt. Stir until combined then add the water. Stir until combined and lastly, fold in the blueberries. 
  • Divide the batter evenly between the muffin cups, filling each cup full. Bake for 18-20 minutes. Cool for 10 minutes before moving the muffins to a cooling rack to finish cooling.
  • Enjoy!
