Dairy-free S’more Pie

Dairy-free S’more pie is a delicious and unique pie! I love that this pie is made with homemade marshmallow fluff which is much healthier than commercial marshmallow fluff and is super easy to make! This s’more pie has 3 delicious layers, just like a regular s’more! The pie has a crunchy graham crust, a fluffy marshmallow filling, and a tasty chocolate topping! My dairy-free s’more pie is made with wholesome ingredients and is a perfect pie option for Thanksgiving!

The Crust

The crust for this s’more pie is made out of graham crackers. I use Pamela’s Honey Grahams which are gluten-free and nut free, however, they are not dairy-free. If you can not have dairy you may consider making your own dairy-free graham crackers to use as the crust! Here is how I make my graham cracker crust for this pie:

  1. Preheat the oven to 350 degrees F.
  2. Pulse one bag of graham crackers (12 whole crackers) in a food processor.
  3. Melt 1/4 cup of organic butter or organic coconut oil and add it to the graham cracker crumbles.
  4. Pulse until everything is combined.
  5. Pat the crumble mixture out into a 9″ glass pie plate.
  6. Bake for 8-10 minutes.
  7. Allow it to cool before filling!

Homemade Marshmallow Fluff

Making your own marshmallow fluff is very easy and simple to do! It doesn’t require very many ingredients and homemade marshmallow fluff definitely is healthier than store bought marshmallow fluff. I love that this marshmallow fluff uses raw honey and gelatin obtained from a reliable source to create a healthy and delicious marshmallow fluff recipe! When heating up the honey mixture, I use a candy thermometer to make sure the mixture is heated to the right temperature. You will want to make sure that you stir the honey mixture continually to prevent the honey from burning.

When pouring the honey mixture into the gelatin mixture, you will want to make sure you pour slowly. After you have beaten in the honey, you need to continue to beat the mixture for 8 to 10 more minutes! I use a hand held electric beaters to beat my marshmallow fluff with and sometimes holding those beaters for that long gets tiresome! However, watching the marshmallow fluff double in size and become light and fluffy is always fun to watch!

You may have more marshmallow fluff than will fit in your pie crust, but that’s an easy problem to fix! Just lightly grease another small baking dish and pour the leftover marshmallow fluff into it. You can eat the leftover marshmallows later, if you can wait that long!

Chocolate Topping

The last part of this s’more pie is the chocolate topping! I use Enjoy Life mini chocolate chips for the topping of this pie. Enjoy Life chocolate chips are dairy-free and gluten free. They melt down easily and create a smooth chocolate topping! You can add 1 or 2 tablespoons of coconut milk or coconut cream at the same time as you are melting the chocolate chips if you would like. The coconut cream or milk will make the chocolate softer when it hardens, which can make it easier for cutting the pie!

With a delicious graham cracker, fluffy marshmallow filling, and tasty chocolate topping, there is no reason why this pie shouldn’t qualify as a s’more pie! I love the taste, texture, and simplicity of this pie! It is a super easy and quick pie to make and it requires minimal ingredients! My family loved this pie and I am sure yours will too!

Dairy-free S'more Pie

Ingredients

  • 2 tblsp. Great Lakes gelatin
  • 1/4 cup water
  • 1 cup raw honey
  • 2 tsp. pure vanilla extract
  • pinch of salt
  • 1 pre-baked graham cracker crust
  • 1/2 cup Enjoy Life mini chocolate chips

Instructions

  • Sprinkle the gelatin over the water in a large mixing bowl and set aside.
  • In a small saucepan, whisk together the honey, salt, and vanilla. Bring the mixture to a simmer over medium heat. Stir constantly. Wait until the mixture reaches a temperature of 240 degrees F.
  • Using beaters on medium speed, slowly beat the honey mixture into the gelatin mixture. Pour the honey mixture slowly while beating, this should take about 1 minute.
  • Once the honey mixture is beat in, continue beating for an additional 8-10 minutes. The mixture should double in volume and become light and fluffy!
  • Transfer the marshmallow fluff into the pre-baked graham cracker crust. You may have some marshmallow fluff leftover that you can put in another container to eat later!
  • Allow the marshmallow fluff to set up for 4 hours.
  • In a small saucepan, melt the chocolate chips over low heat. Stir occasionally.
  • Spread the melted chocolate over the marshmallow fluff. Allow the chocolate to harden.
  • Cut and serve!
