Dairy-free Egg Custard Pie (grain-free)

Dairy-free egg custard pie is a delicious, light pie that is full of flavor! I love the delicate texture of this pie and it’s sweet, tasty flavor. Egg custard pie is easy to make and contains simple, healthy ingredients. This custard pie is also gluten-free, grain-free, dairy free, nut free, and is made with a slow-metabolizing sugar! I am sure this delicate, flavorful dairy-free egg custard pie would compliment any holiday festivities!

I love pies, as if you couldn’t tell. Baking them, eating them, trying new pies, resurrecting old pies, experimenting with creative pie fillings, and sharing pies with others is all very enjoyable for me! When I was doing research on pies to put together this 21 Days of Pie series, I came across some very fascinating facts about pies!

  • The American Pie Council estimates that over 186 million pies are bought at the grocery store each year, also, they say that 7% of Americans have tried to call a store bought pie homemade!
  • Another statistic by the American Pie Council states that 1 in 5 people have eaten an entire pie by themselves and that 1/3 have had a slice of pie in bed.
  • Massachusetts has a state dessert, the Boston Creme Pie (which is actually not a pie by definition).
  • Of the 50 states in the U.S.A., 24 claim apple pie as their favorite pie!
  • The Pilgrim’s first pies were made with native fruits and berries that the Native Indians showed them. Pumpkin pie was served at the Pilgrim’s second Thanksgiving.
  • The most popular pie flavors in the United States are apple pie, pumpkin pie, chocolate pie, lemon meringue pie, and cherry pie.
  • A world record for the most pie slices eaten in a single setting stands at 32 slices of pumpkin pie in 30 minutes!
  • New Mexico has a town called Pie Town. Now there’s a place I want to visit!

National Pie Day Calendar

I love celebrating with pie, and I also find it interesting that there are so many different National pie days! I went on the National Day Calendar website and found a bunch of national pie days. Here are a few dates you may want to mark on your calendar!

There are plenty of days to celebrate pie on, but it doesn’t have to be a national pie day to just enjoy a good slice of pie. This dairy-free egg custard pie is a great ‘anytime’ pie! It is super easy to make and tastes delicious!

Dairy-free Egg Custard Pie (grain-free)

Servings 8 slices

Ingredients

  • 4 large organic, free-range eggs
  • 2 cups SoDelicious unsweetend coconut milk
  • 2/3 cup coconut sugar
  • 1 tsp. vanilla extract
  • pinch of salt
  • pinch of ground clove
  • 1 unbaked grain-free pie crust

Instructions

  • Preheat the oven to 395 degrees F.
  • In a high speed blender, combine the egg, milk, coconut sugar, vanilla, and salt. Blend on high until everything is thoroughly combined.
  • Pour into the unbaked pie shell. Sprinkle with the ground clove. Bake for 15 minutes.
  • Without opening the oven door, reduce the temperature to 325 degrees F. Bake for 35-40 more minutes. To see if the pie is done, insert a knife into the center. If the knife comes out clean, the pie is done.
  • Cool before slicing and serving!

Notes

The pie filling could also be mixed by hand or by using hand held beaters. Just make sure the filling is smooth and well mixed.
