Dairy-free Egg Custard Pie (grain-free)

Ingredients

  • 4 large organic, free-range eggs
  • 2 cups SoDelicious unsweetend coconut milk
  • 2/3 cup coconut sugar
  • 1 tsp. vanilla extract
  • pinch of salt
  • pinch of ground clove
  • 1 unbaked grain-free pie crust

Instructions

  • Preheat the oven to 395 degrees F.
  • In a high speed blender, combine the egg, milk, coconut sugar, vanilla, and salt. Blend on high until everything is thoroughly combined.
  • Pour into the unbaked pie shell. Sprinkle with the ground clove. Bake for 15 minutes.
  • Without opening the oven door, reduce the temperature to 325 degrees F. Bake for 35-40 more minutes. To see if the pie is done, insert a knife into the center. If the knife comes out clean, the pie is done.
  • Cool before slicing and serving!

Notes

The pie filling could also be mixed by hand or by using hand held beaters. Just make sure the filling is smooth and well mixed.
