Dairy-free Chicken Pot Pie Soup

Creamy, rich, and full of flavor… this dairy-free chicken pot pie soup has got to be one of my favorite soups! Soup season is here and I can’t wait to start adding delicious, warm soups to my weekly menu. Dairy-free chicken pot pie soup is the perfect menu item for when I want a creamy soup that is super easy to make and still super nutritious. It’s allergy friendly, uses simple ingredients, and can be served a variety of different ways making it fun and delicious!

Pioneer Recipe

While you typically think of the apple pie as being the traditional American pie, pot pie has actually been around longer! I love making chicken pot pie, but I will admit, it takes a lot of prep time. That’s why I love this chicken pot pie soup. It has all the flavors and the perfect consistency to remind me of a pot pie, but it is super simple to make! The pioneers would have found chicken pot pie soup to be a very feasible and easy meal to prepare while on the wagon train or on the homestead.

It uses traditional ingredients like cooked chicken, garden grown vegetables, homemade bone broth, and wholesome milk. The earlier pioneers probably had slightly different ingredients to work with, but as modern pioneers, we can use what we have on hand and adapt our meals to fit into personal dietary restrictions.

As a modern pioneer, I think that any recipe that is that healthy and still tastes delicious is one worth keeping on the menu!

Want to try making this recipe like a pioneer? Use home-grown vegetables, homemade bone broth, and homestead raised chicken. If you raise a dairy animal on your homestead and don’t have a dairy dietary restriction, substitute goat’s milk or cow’s milk for the coconut milk.

Also, this would be a fun recipe to make in a cast iron Dutch oven over the campfire! I am just learning about Dutch oven cooking and I think this recipe would be super easy to make over the fire! Basically you just need to bring the ingredients to a simmer and cook the soup long enough for the carrots to soften.

Everything Pot Pie

Chicken pot pie has been around for longer than the traditional, American apple pie, and I can see why. It can easily be made with whatever vegetables you have on hand and it is very hearty. I make it with onion, celery, carrots, and peas, but feel free to add whatever vegetables your family likes. The vegetables in this soup offer plenty of nutrients and makes eating vegetables easy!

Homemade bone broth is another extremely beneficial ingredient in this soup! Bone broth improves immune system health and digestive health and supports good bone and teeth health. Use homemade bone broth in this recipe, not store-bought broth, which is mostly water. You can use homemade chicken bone broth, homemade beef bone broth, or homemade venison bone broth in this recipe. I recommend chicken bone broth though since it is a chicken based soup.

The flavor of this soup is amazing and even my dad, who doesn’t eat vegetables, will eat this soup! I love the creamy flavor and texture that the coconut milk gives the soup, but it is nice that the soup doesn’t taste coconutty. The coconut milk and tapioca flour is what makes this a creamy, thick soup. Adjust these two ingredients to make the soup as creamy and thick as you want.

More tapioca flour and coconut cream will make the soup thicker and creamier. Also, if the soup is allowed to cool, the tapioca flour will help the soup set up and make it even thicker, more like a chicken pot pie filling.

Serving Pot Pie Soup

Another thing that I love about chicken pot pie soup is that there are so many serving options! Since chicken pot pie would traditionally have a double crust, I like to serve this dairy-free chicken pot pie soup with a bread product. There are so many grain-free and gluten-free bread products to choose from for serving with this soup! Here are some of my favorites:

The Chebe rolls can easily be made into bread bowls for serving the soup in and they can easily be made dairy-free too! Against the Grain baguette is another delicious bread product that I keep stocked in my freezer for when I don’t have time to make a homemade bread product. For homemade baked goods, I love making the two grain-free breads mentioned above and muffins are always a favorite of mine! What’s your favorite side to have with soup?

Another thing about this dairy-free chicken pot pie soup is that it is delicious served warm or cold! If you want a warm, nutritious dinner that is flavorful and cozy, then this chicken pot pie soup is perfect! On the other hand, if you need a quick lunch and can’t heat anything up, this soup is still delicious cold!

I enjoy having warm chicken pot pie soup for dinner with homemade bread, rolls, or muffins. I also enjoy heating up the leftovers for a warm, quick, and nutritious breakfast. Then again, I am a cold soup lover and I enjoy having cold chicken pot pie soup for lunch or a nutritious snack. The thick, creamy texture of this soup is delicious when it is allowed to set up in the fridge!

Recipe Tips

Chicken pot pie soup is super easy to make! It uses simple ingredients and is really easy to whip up in a few minutes. Since the soup is made in the crockpot, it only takes a few minutes of prep before you have a meal all set to go in the crockpot for dinner. Here are a few tips to ensure your chicken pot pie soup turns out fantastic!

  • Add the tapioca flour to cold ingredients to keep it from clumping. Whisking also helps distribute the flour.
  • If you don’t have a Vitamix, blend the vegetables in a food processor until they reach the desired consistency. You can make the vegetables as pureed as you want or you can leave them in chunks and slices.
  • You can use your favorite milk substitute instead of coconut milk in this recipe. However, the cream that separates on the top of the coconut milk is what helps give this soup its creaminess and thickness.
  • Arrowroot flour can be substituted for the tapioca flour, but I have not tried any other flour substitutes.

Dairy-free chicken pot pie soup is thick, creamy, and bursting with flavor! I love making this soup for cool, fall evenings, having it as a quick, warm breakfast, or enjoying it cold and creamy as a nutritious snack. Any way you look at it, this dairy-free chicken pot pie soup is delicious, nutritious, and the perfect pioneer recipe!

Dairy-free Chicken Pot Pie Soup

Ingredients

  • 2 cups cooked shredded chicken
  • 4 cups homemade chicken broth
  • 1 onion, diced
  • 3 ribs of celery, diced
  • 1 13.5 oz. can organic coconut milk
  • 2 large carrots, diced
  • 1 cup frozen peas
  • 6 cloves of garlic
  • salt and pepper
  • dried sage
  • 1/4 cup Bob’s Red Mill tapioca flour

Instructions

  • Pour the chicken broth into a crock pot and add the shredded chicken.
  • Place the onion and celery into a high speed blender (I use a Vitamix) and add the coconut milk and tapioca flour. Blend on high speed until everything is pureed. Pour the mixture into the crockpot.
  • Add the carrot, peas, garlic, salt, pepper, and sage. Stir everything until it is combined.
  • Program the crock pot to high. Cook on high for 4 hours or program the crockpot to low and cook on low for 6 hours.

    • Good question! Looks like I forgot to include that in the instructions, thanks for bringing that to my attention. I usually add the tapioca flour to the Vitamix with my pureed vegetables and coconut milk to ensure that it gets thoroughly mixed and doesn't form clumps. Hope that helps! -Alexa
