Eggs are a wonderful homestead food that are often in abundance during the spring and summer. Don’t get stuck using them in the same old dishes! There is such a variety of ways that you can eat eggs… I dare you will never get bored of them if you experiment with these different egg recipe ideas! Eggs are full of nutrients and are a great, healthy source of protein. They contain all of the vitamins essential to living except for vitamin C (which chickens synthesize themselves). Eggs make the perfect breakfast, lunch, dinner or snack food! I hope that these 50 healthy ways to eat eggs will help you incorporate eggs into your homestead diet!

Fun Fried Eggs
Fried eggs are a fast and easy way to eat eggs. I fry my eggs in bacon fat in a cast iron skillet over low heat. I love fried eggs, but sometimes I feel like I need to spruce up a plain, fried egg. Here are a few fun recipe ideas that you can do with a fried egg:
Fried Egg and Bacon or Sausage- I use all-natural, non-GMO, organic bacon, Applegate’s organic sausage links, or homemade venison sausage patties.
Breakfast Sandwich- I love making a breakfast sandwich using grain-free bread, grain-free rolls, or a gluten-free bagel. A simple breakfast sandwich consists of: a fried egg, some raw or dairy-free cheese, and bacon or sausage. Sandwich these ingredients between your bread of choice and enjoy!
Eggs in a Nest– Eggs in a nest is simply an egg fried inside of a hole cut into a slice of bread! You can use grain-free bread or gluten-free bread.
Grilled Cheese Egg Sandwich- Simply use a fried egg, raw or dairy-free cheese, and some gluten-free and/or grain-free bread to make yourself a grilled cheese egg sandwich!
Huevos Rancheros- A delicious, Mexican rendition to a classic fried egg with the addition of salsa, avocado, and refried beans!
Fried Egg Varieties– Try frying your eggs sunny-side up, over easy soft, or over easy hard! Garnish them with some fresh herbs, salt & pepper, or a shake of garlic salt.
Scrumptious Scrambled Eggs
Scrambled eggs are also easy and simple to make! I was surprised at all the different recipes that you could make with scrambled eggs. You can make them hard, soft, or anywhere in-between based on how long you let them cook in the skillet. Here are some of my favorite ways to fix scrambled eggs:
Scrambled Egg Varieties- I love that scrambled eggs can be customized to each person’s liking! Organic veggies, non-GMO meats, or dairy-free cheese can all be added to scrambled eggs to make custom versions!
Egg Wraps- Egg wraps are super simple to make using scrambled eggs and a gluten-free or grain-free tortilla. Coconut wraps, almond flour tortillas, burrito wraps, or quinoa tortillas also make delicious egg wraps!
Egg Quesadillas- Egg quesadillas can be made simply using scrambled eggs, raw or dairy-free cheese, and grain-free or gluten-free tortillas!
Pita Pocket Eggs– I like using Against the Grain pita bread as a grain-free pita option or making my own homemade pita breads. Fill the pita with scrambled eggs and some cheese for a delicious pita pocket sandwich!
Breakfast Nachos- Nachos for breakfast!? Sure! I use Siete tortilla chips to make my breakfast nachos grain-free. Simply lay out your chips, sprinkle scrambled eggs over the chips, add some meat, sprinkle on some cheese, and place in the oven to melt the cheese!
Breakfast Pizza- Want to have pizza for breakfast?! Use scrambled eggs, meat, leafy greens, and cheese as toppings! You could even crack a whole egg onto the pizza instead of using scrambled eggs!
French Toast- I absolutely love french toast! Check out this delicious grain-free French Toast Recipe!
Omelet- Making an egg omelet is so easy and fun! I like to make an individual omelet in my mini cast iron skillet!
Baked Eggs Recipes
One of the broadest categories… baked eggs has so many delicious recipes to try for breakfast, lunch, or dinner. My favorite go-to recipes are Finnish pancakes and eggs-in-a-hole.
Finnish Pancakes- Here is a great, grain-free Finnish pancake recipe that I love to have with maple syrup!
Frittata- A frittata is similar to a Dutch baby and can be customized to your liking. I like to put sweet potato, spinach, onion, and cheese in my frittata which I bake in a cast iron skillet!
Egg Casserole- You can make an egg casserole using a variety of ingredients and they are simple and easy to make.
Individual Egg Ramekins- Crack an egg into a small ramekin and add some other goodies like vegetables, pre-cooked sausage or bacon, or sweet potato and bake yourself up a single serving meal!
Quiche- I love to bake up this delicious dairy-free cheesy ham quiche!
Egg Bread Boats- Simply hollow out a long baguette (I like to use Against the Grain baguette which is grain-free), pour some beaten eggs into the ‘boat’, add your favorite meat and some cheese, and bake yourself up an egg boat.
Potato Egg Bowl- Kind of like twice-baked-potatoes except instead of re-stuffing the potato, add some beaten eggs, some meat, and some cheese and finish baking!
Eggs ‘n’ Avocado- Bake an egg into the hole of an avocado and you’ve got yourself a power meal!
Egg ‘n’ a Hole- Don’t like avocado? That’s okay, just use a bagel instead! I like to use Against the Grain sesame bagels or make my own grain-free bagels for egg ‘n’ a hole.
Sheet Pan Eggs- Beat the eggs first or crack them right into the pan, either way, sheet pan eggs is the easiest way to cook up eggs for a crowd!
Make Ahead Egg Meals
Need a quick, easy, and nutritious breakfast? These make-ahead egg meals have got you covered! You can prepare them the night before and stick them in the oven the next morning. Or you can even bake some of them ahead of time and freeze them for later!
Egg Muffins- I love how easy and fun egg muffins are to make! They make a great, quick breakfast when made ahead of time and can be frozen for later too.
Egg Enchiladas- Wrap up some meat and cheese in a few grain-free and/or gluten-free tortillas, pour some beaten eggs over them, bake them, and… voila!!! Delicious egg enchiladas!
Egg Bites- Egg bites are similar to egg muffins except you can make them without a muffin tin and can even make them in an Instant Pot!
French Toast Bake- This delicious, grain-free French toast bake is so good, it could almost be dessert!
Egg Hand Pies- Cute little hand pies make the perfect all-in-one breakfast option. You’ve got the bread, the eggs, the cheese, and the meat, all in one pocket! I like to use the Chebe all-purpose bread mix for making my grain-free hand pies.
Spaghetti Squash Egg Cups- Encircle your eggs with a little spaghetti squash and bake them in a muffin tin or a small ramekin!
Unique Egg Recipes
Many of these egg recipes I had never heard of before! Some of them are unique to certain countries or people groups, others are just a plain old unique combination of ingredients.
Cloud Eggs- Fluffy white potatoes plus delicious eggs equals cloud eggs! Guess what? You can even use sweet potato, you’ll just have storm cloud eggs.
Dutch Baby- The Dutch’s spin on the Finnish’s pancake. Both are delicious and I love that a Dutch baby is baked in a cast iron skillet!
Strata- Similar to a French toast bake except with a lot more creativity! Add vegetables, cheese, meat, and use your favorite bread product like baguette, bread, or bagels!
Matzo Brei- A traditional Passover meal that uses matzo (kind of like a cracker) and eggs and other yummy toppings (veggies, maple syrup, mushrooms, etc…).
Scotch Eggs- An egg encased in meat and bread crumbs, sounds pretty good right? You could leave out the bread crumbs to make it grain-free or use gluten-free bread to make it gluten-free.
Shakshuka- Simply put, eggs baked in a tomato base with lots of spices and seasonings. Delicious!
Egg Curry- Curry is good with everything else, right? Why not eggs? Use hard-boiled eggs to make yourself some egg curry!
Egg Vindaloo- Similar to egg curry, egg vindaloo is a combination of spicy peppers, garlic, and onion on hard-boiled eggs!
Chinese Steamed Egg- Simple but elegant. This dish uses only two ingredients, water and eggs!
Turkish Eggs- You make this fancy dish with lots of eggs, yogurt, olive oil, butter, vinegar, and some spices and herbs. Sounds interesting…
Egg Based Desserts
Bread Pudding- While bread pudding may sound kind of straight forward, it does actually contain quite a few eggs! Similar to baked French toast, bread pudding can be made into a variety of different flavors (and you can have it for breakfast or for dessert!).
Custard Pie- Custard pie turns eggs into a delicious, sugary, pudding-like dessert that has an amazing taste!
Souffle- I love making a souffle! It is the perfect, light dessert that is sweet and can be made into a variety of flavors. Pumpkin souffles are my favorite, but lemon or chocolate sound good too.
Other Egg Recipes
These final egg recipes are ones that I couldn’t fit into a category but they are still easy, fun, and delicious to make!
Deviled Eggs- Wicked chickens lay deviled eggs. Fortunately, there are no wicked chickens, so you have to make your own deviled eggs!
Hard Boiled Egg Salad- A simpler option instead of making an egg salad is just adding a hard boiled egg to a lettuce salad with some of your favorite salad toppings!
Poached Eggs- The only kind of legal poaching you can do… poached eggs are simple and delicious to make!
Grilled Eggs- You can bake, fry, boil, and steam eggs, and now you can even grill them! You can grill eggs in a bread bowl, bell pepper halves, avocado halves, or in anything else that will contain them and is grill-safe.
Egg Salad- I love to make egg salad using organic mayonnaise. There is a great dairy-free egg salad recipe in our free ebook, The Truth About Keeping Chickens Naturally.
Egg Benedict- I like to think of egg benedict as a glorified poached egg! They taste great on a grain-free slice of bread or served with bacon, ham, or avocado!
Egg Waffles- You can make waffles using eggs! Start like your going to make an omelet, but instead of pouring it into a frying pan, pour it into a waffle maker.
Boiled Egg Bites- A super simple way to have a bread-less egg sandwich! Boil some eggs, slice them in half, and make yourself a sandwich.
